250 g very small strawberries
3 eggs
200 g of soft butter
250g of flour
125 g of extra-fine sugar
5 cl of lemon juice
1 sachet of baking powder

Steps

Strawberry cakes

In advance : mix flour, a pinch of salt and yeast. Preheat the oven to 200 ° C (item 6).

Prepare the dough : beat the chopped butter and the sugar until you get a cream. Add the eggs one by one while beating; wait each time it is absorbed to add the next one. Add in small volumes, alternating and without turning turn, flour and lemon juice.


Cook : add the strawberries in the dough, mix by turning upwards so as not to damage them. Spread in the molds. Bake for 15-20 minutes: the small cakes must be inflated, golden and taken to heart. Return to unmold as soon as you leave the oven, let cool on the grill.

Variations . • Replace the lemon with strawberry, wild strawberry or raspberry liqueur.

Add 1 tbsp. to s. of lemon zest or orange chopped very fine.

Pierce the dough with a few rounds of pepper mill.
