300 g of surimi sticks
1 zucchini
2 lemon juice
3 egg yolks
70 g of flour
20 g of cornstarch
2 ice cubes
5 cl of olive oil

Steps

Step 1

Preheat the fryer to 180 ° C (tea 4). The sauce: heat egg yolks and lemon over very low heat while turning. As soon as it thickens a bit, pour the oil drop by drop, then in a thin stream whipping; remove fire from time to time so as not to overheat (the egg will coagulate). You get like a mayonnaise. Get out of the fire.

2nd step

Mingle flour, starch and salt in a bowl. Pour very cold water turning as little as possible, to obtain a thick paste, without worrying about lumps. Add the ice cubes. Cut unpeeled zucchini into french fries.

Step 3

Dip sticks of surimi and zucchini in the ice cream, then in the fryer. Let it brown. Serve hot with the warm sauce.
