8 2 beautiful ripe apricots

100 g rocket
8 rice cakes

1 2 tbsp. to s. balsamic vinegar

Steps

Summer rolls with apricot

In advance: cut 8 apricots in 8 quarters each. Stretch basil, tear large leaves in 2. Salt 1 tbsp. to s. of vinegar, add 4 tbsp. of oil, pepper with the mill. Mingle vinaigrette, spinach sprouts, arugula and basil.

Assemble: dip the rice cakes one by one in cold salted water to soften them. Place each on a plate, form a bouquet of salad and apricots in the center, roll up the leaf. Squeeze a little without tearing.

To serve: mix 2 pitted apricots, 5 tbsp. of olive oil, 2 tbsp. vinegar, salt, freshly ground pepper. Present the rolls on a nice dish and the sauce in a bowl.
